Tomato & Red Pepper Soup

Tomato and Red Pepper Soup

Ingredients (for 1-2 servings)

  • 1 tbsp olive oil
  • 2g pureed garlic
  • 100 passata (or you can use a tin of chopped tomatoes which you have to put through a sieve)
  • 1 tbsp tomato puree
  • 2 tsp vinegar
  • 15g chopped onions
  • 20g chopped red pepper
  • 150ml vegetable stock
  • 10ml double cream
  • 2 scoops of Nutilis Clear
  • Method

      1. Place oil in a smal pan and add in the garlic, chopped onion and pepper.
      2. Allow to cook gently for 5 minutes but do not brown.
      3. Then add the tomato passata / tinned tomatoes into the pan, along with the tomato puree, 150ml vegetable stock and vinegar and simmer for 15 minutes.
      4. Add cream and blend until smooth.
      5. Whisk or blend Nutilis Clear into the soup to thicken.
      6. Then reheat in the microwave or pan to serve.
